The Peruvian Potato

Peru has the greatest variety of potato in the world . There are approximately 300 varieties well-registered in the International Center4 of Potato (ICP). Eventhough China is the main potato producer in the world, our delicious yellow potato has a greater international demand day after day. This pótato has been sold abroad frozen and pre-cooked.

The scientists of the International Center of Potato have already begun to produce a sexual potato seed whose objective is to produce potatoes with high standards of resistance to diseases and plagues. Another great advantage about potato seeds is that the potato farmers usually sow a potato hectare using twuo tons of conventional seeds (with an apprioximate cost of $ 1300 ) and now the only need 50 grammes of sexual seeds ,whose cost is $100 to sow the same area. This lowers considerably the price of the costs of sowing .

The most eaten potatoes in Peru are :The yellow potato which is quite sandy , ideal for smashed potatoes . This variety has at the same time sub classifications : Tumbay,Limeña, and Huaralina.The Huayro potato comes from Tarma but its crop is spreading all over the peruvian highlands. The Tomasa potato is less sandy than the yellow one and it is a very good complement for barbacues , fried food or pachamancas.The Mariva potato is the one used to prepare the crispy french fries.The black potato is the one with white flesh and black peel.

The potato has been and still is the essential nourriture for peruvians. In the Inca’s time they already prepared Locro dish made with fresh and dehydrated potatoeswhose name in quechua is Chuño. It was served with Lama dried meat ( charqui).We obtain Chuñospeading the potatoes over a flat surface so that the cold at night and then the heat of the day dehydrate them so that they became starch.

Among the most known peruvian dishes whose main ingredient is potato, we have the famous Causa ( smashed yellow potato mixed with oil,chili and lemon); papa a la huancayna, ocopa arequipeña, papa rellena and ajiaco de papas.
