CARPACCIO
DE LENGUADO

Pantagruel Restaurant ChefIngredients:
- 750 gr. Flounder.
- 10 tablespoons extra-virgin olive oil.
- ½ cup letters broth.
- 2 tablespoons mustard seeds.
- White dry wine drops.
- Salt.
- ½ chopped red hot pepper.
- 1 lightly fried red pepper in dices.
- 1 lightly fried yellow pepper in dices.
- 1 lightly fried yellow hot pepper in dices.
- 2 tablespoons capers.
- Fresh dill.
Preparation:
- Filet the fish and spread it over a dish. In a separate bowl, add olive
oil, broth, mustard seeds, white wine, hot pepper and salt.
- Beat and dress it with this fish mixture.
- Use red hot pepper, yellow hot pepper, capers as complement. Finally
sprinkle fresh dill.
