ENSALADA DE ARROZ Y CAMARONES (Rice and Shrimps Salad)

Ingredients:

  • 2 cups rice .
  • 2 cups mayonnaise .
  • 1 cup artichoke bottoms, chopped and boiled .
  • 1 cup boiled shrimp tails .
  • ¼ cup chopped pickles .
  • 1 tablespoon water ( The one in which shrimps were boiled )
  • ½ cup´chopped celery .
  • 2 layers fish glue .
  • Curly parsley to garnish .

Preparation:

Boil rice in a good quantity of salted water . Drain it and leave it cool. Mix all the ingredients except some shrimps tails ( to garnish ). After mixing , add fish glue and make sure that it mixes well with the rest of the preparation. Fill a hole centered mold with it and refrigerate it for half an hour . Take it out of the mold and garnish with shrimp tails and curly parsley .
