CAUSA
RELLENA CON POLLO

Pantagruel Restaurant ChefIngredients:
- ¼ kg. yellow potato.
- 1/5 cup olive oil .
- 4 table spoons chili cream.
- Juice of 3 lemons.
Filling:
- 1 small breast of cooked chicken .
- 1 cup mayonnaise.
- 5 table spoons celery finely cut.
- 2 hard-boiled eggs .
- 1 sliced-avocado.
- 1 cooked thrashed corn .
- 1 teaspoon chopped persil.
Preparation:
- Wash the potatoes carefully and boil them in water and salt .Peel and
smash them when they are hot .
- Put the smashed potatoes in a big bowl and add olive oil and chili (
Previously you have to take the pips and veins off, boil them more than once , peel and
mix them with a bit of oil ). Keep on seasoning and when the smashed potato is cold , add
lemon juice , salt and pepper. Knead well , joining thoroughly all the ingredients . You
can add mixed whites to give the tough more softness.
- In another bowl mix mayonnaise with celery, chicken,persil and thrashed
corn. Divide the smashed potato in three parts . Put the first layer on a tray spreading
it with the hands, add the chicken and mayonnaise mixture ( saving a small part ) and
cover it with another layer of smashed potato . Then place avocado , eggs and the
remaining chicken and mayonnaise mixture and finally cover it with the last layer of
smashed potato . You can garnish it with hard-boiled eggs , lettuce, olives, yellow chili
slices , fresh cheese and thrashed corn.
