ANTICUCHOS
DE CORAZON
( Peruvian Kabobs )

4 servingsIngredients:
- 1kg.poultry hearts (chicken or duck)
- 1 teaspoon ground garlic.
- ½ teaspoon cumin seed.
- 1 glass red vinegar.
- 2 tablespoons ground hot pepper.
- 1 tablespoon oregano.
- Annotto.
- Salt and pepper.
Preparation:
- Remove fat from hearts. Wash them carefully in salt and water. Put them in
a bowl and add the ingredients. Marinate for 2 hours.
- Once marinated, put hearts in wooden skewers. You can alternate hearts
with some vegetables.
- Put the "anticuchos" on a spit over direct heat and let them
roast so that they do not dry.
- Serve it with potatoes, corn and hot pepper sauce.
