ANTICUCHOS DE CORAZON
( Peruvian Kabobs )

Ingredients:

  • 1kg.poultry hearts (chicken or duck)
  • 1 teaspoon ground garlic.
  • ½ teaspoon cumin seed.
  • 1 glass red vinegar.
  • 2 tablespoons ground hot pepper.
  • 1 tablespoon oregano.
  • Annotto.
  • Salt and pepper.

Preparation:

  • Remove fat from hearts. Wash them carefully in salt and water. Put them in a bowl and add the ingredients. Marinate for 2 hours.
  • Once marinated, put hearts in wooden skewers. You can alternate hearts with some vegetables.
  • Put the "anticuchos" on a spit over direct heat and let them roast so that they do not dry.
  • Serve it with potatoes, corn and hot pepper sauce.
