Mazamorra
Ingredients:
  • ½ kg. Purple corn.
  • ½ kg. Pineapple .
  • 1 apple.
  • 1 quince.
  • 1 large stick cinnamon.
  • 3 cloves.
  • 1/4 teaspoon anise seed.
  • 3 lt. Water.
  • ½ cup prunes .
  • ½ dried peaches .
  • ½ guindon cherries .
  • Sugar to taste .
  • Sweet potato flour.
  • Lemon juice .

Preparation:

  • Boil the corn with water, pineapple rind, quince, apple, cinnamon, clove and anise seed . Boil it until the liquid becomes very dark . Strain .
  • Prepare a compote with all the fruits , add water to cover them and sugar to taste .Dissolve the sweet potato flour in a small amount of water . Add the purple corn ( already with fruit ). Stir until cook ( 10 minutes ) . Remove it from heat and add lemon juice . Cool and sprinkle with ground cinnamon .
