Picarones
(Peruvian doughnuts)
Ingredients:
  • 1 kg. All purpose flour.
  • 1 kg. Sweet potato .
  • 1 pumpkin.
  • 1 cinnamon stick .
  • 2 cloves .
  • 1 teaspoon salt .
  • 1 teaspoon anise seed .
  • 1 lt. Water .
  • 150 gr. Yeast .
  • Oil .
  • Molasses .

Preparation:

  • Boil sweet potatoes, peeled pumpkin with cinnamon and clove . Put on the working table the flour making a crown . In the center place yeast, sweet potato and pumpkin with all its water .
  • Beat it well. Add anise seed and salt . Keep kneading until it doesn’t stick to the table anymore .
  • Place the batter in a bowl, cover it with a damp cloth . Let it yeast.When it is doubled in volume , heat the oil in a deep frying pan .
  • Take portion of the batter with wet fingers with salt water . Place it on the skillet making a big hole in the center. Turn it with the help of a stick. Serve it with molasses .
