ARROZ
CON CAMARONES
(Rice with Shrimps)
4 servings

Pantagruel Restaurant ChefIngredients:
- 2 kg. shrimps.
- 600 gr. cooked rice.
- 3 tablespoons annotto oil .
- 1 finely chopped onion.
- 1 teaspoon ground garlic.
- 2 tablespoons blended yellow hot pepper .
- 1 cup white dry wine.
- Shrimps gills.
- Coriander leaves (Optional)
- Salt and pepper.
Preparation:
- Wash the shrimps, Scoop the gills out and dissolve them in a ¼ cup
broth. Set aside.
- In a big saucepan, pour annotto oil and fry the onion, garlic, hot pepper,
white wine and gill. Cook it for a minute before adding rice. Let the flavors blend and
add water if necessary.
- In another frying-pan , sauté shrimps and add them to rice. If desired,
add grated parmesan cheese, some peas and red pepper.
