ARROZ CON CAMARONES
(Rice with Shrimps)

Ingredients:

  • 2 kg. shrimps.
  • 600 gr. cooked rice.
  • 3 tablespoons annotto oil .
  • 1 finely chopped onion.
  • 1 teaspoon ground garlic.
  • 2 tablespoons blended yellow hot pepper .
  • 1 cup white dry wine.
  • Shrimps gills.
  • Coriander leaves (Optional)
  • Salt and pepper.

Preparation:

  • Wash the shrimps, Scoop the gills out and dissolve them in a ¼ cup broth. Set aside.
  • In a big saucepan, pour annotto oil and fry the onion, garlic, hot pepper, white wine and gill. Cook it for a minute before adding rice. Let the flavors blend and add water if necessary.
  • In another frying-pan , sauté shrimps and add them to rice. If desired, add grated parmesan cheese, some peas and red pepper.
