Arroz
con Pollo
4-6 servings Ingredients:
- 1 chicken serving piece per person.
- ½ cup oil.
- 1 chopped red onion.
- 1 teaspoon ground garlic.
- ½ cup fresh ground coriander.
- Ground hot pepper to taste.
- 2 cups beer.
- 2 cups water.
- 3 cups good quality rice.
- 200 gr. cooked peas.
- 1/2 cup corn kernels.
- 1 red pepper, cut in strips.
Preparation:
- Season the chicken serving pieces with salt and pepper and fry them in hot
oil. Remove the chicken from the skillet and in the same oil, fry onion, garlic, hot
pepper, and coriander.
- Once cooked, add the chicken serving pieces so that they keep on cooking.
Then add beer and water. Leave it boil and when it starts boiling, add rice previously
washed and dried, peas and corn kernels.
- Put the lid on and leave it cook until the rice is dry. (Approximately 15
minutes.)
- Serve it hot.
