Menestrón a la Peruana (con pulpo y conchas)
4 servings

Ingredients:

  • 1 ½ cooked sliced octopus.
  • 4 dozens scallops.
  • 5 tablespoons oil.
  • 1 chopped onion.
  • 3 chopped garlic cloves.
  • 1 cup blended basil leaves.
  • 2 lt. letter or fish broth.
  • 3 cups assorted vegetables (fresh beans, broad beans, lima beans, carrots)
  • 4 yellow potatoes (optional)
  • 150 gr. macaroni.
  • Parmesan cheese.
  • Salt and pepper.

Preparation:

  • Wash octopus well, strain and boil it for 40 minutes. Then cut it in slices. In another bowl, prepare seasoning with oil, onion and garlic and leave it soak well before adding the broth and the blended basil.
  • Season with salt, pepper and if desired, bay leaf and a pinch of oregano. Leave it boil, add the vegetables you prefer, taking in account that the "menestrón a la peruana" is open to any changes. Finally add noodles (macaroni), wait until they are cooked and before serving add seafood.
  • Do not forget to grate parmesan cheese. Accompany it with ground hot pepper.
