Locro de Zapallo
4 servingsIngredients: 1 ½ kg. macre pumpkin
3 medium-sized white potatoes, cut in pieces
½ kg. peas
3 tender corns, cut in slices
½ cup oil
1 small-sized chopped onion
1 teaspoon ground garlic
Ground chili to taste
200 gr. feta cheese
½ cup evaporated milk.
Dried oregano to taste
Feta cheese slices to garnish
Preparation: In a pot with hot oil, prepare a seasoning with
onion, garlic, hot pepper to taste and oregano. Let it cook for a while and add pumpkin in
pieces, peas, potato and corn.
Let it cook at low heat with the lid on. Do not add water. Let it cook for some minutes
and then add meat and feta cheese. Remove from heat and warm.
Garnish with feta cheese slices.
Serve it with rice.
