Aji de Mariscos

Ingredients:

  • 300 gr. assorted seafood.
  • 3 ground red hot pepper.
  • 2 pieces of bread.
  • ½ can evaporated milk.
  • 80 gr. Parmesan cheese.
  • 2 tablespoons wheat flakes.
  • 1 cup fish broth.
  • 1 finely chopped onion.
  • 50 gr. ripe olives.
  • 300 gr. yellow potatoes.
  • 2 hard-boiled eggs.
  • 2 tablespoons garlic, ground ginger, oil, salt, pepper and cumin seed.

Preparation:

  • Season seafood with salt, pepper and leave it rest for some minutes.
  • In a separate bowl, plunge bread and wheat flakes into milk.
  • In a frying-pan put a dash of oil and prepare a seasoning with onion, garlic, ginger, ground hot pepper, salt, pepper and a pinch of cumin seed .Add to the seasoning, soaked bread, then seafood and add the fish broth as it thickens, stir constantly. Add half of the grated cheese and keep on stirring for some minutes until it thickens. Taste the salt.
  • Serve it with cooked and sliced potatoes, garnish with olives and hard-boiled eggs and sprinkle it with the rest of the cheese.
